I am your host Jennifer DiDonato and this is episode number 54 and it's a very special episode because I have my sister Nicole DiDonato here in town, in Metro area, she lives in Evansville Indiana. So she is here to join me to help me with this recipe. So, thanks for joining us today. We are doing fat-free Raspberry Lemon Cheesecake Bites. Nicole do you like cheesecake?
Nicloe DiDonato: Oh! I like cheesecake. I am big sweet tooth. Jenny knows that. So, she greeted me with one of these things when I came home the other night. Really good.
Jennifer DiDonato: Yeah they really good. Really good. And just so you guys know, I said fat-free but these are virtually fat-free because there is less than a half a gram of fat in them. So, I figured, we are going to basically call them fat-free and they are sugar free as well. So, if you are diabetic, these are a great recipe for you to make.
Nicole DiDonato: And they are good size too.
Jennifer DiDonato: Very good size. Exactly. So, we are going to get started right now. First thing that we did, what I did is, I preheated the oven for 325 degree, preheated for about 15 minutes. The ingredients that we are going to be using right now of course, my staple is always egg whites, eggs. So, I have about four eggs right here. You are going to use one whole egg and three egg whites.
Actually while I am doing this Nicole, can you just open up those cream cheeses. While I am doing the egg whites. Nicole is going to open up the cream cheese packets. You are going to need two 8-ounce packages of fat-free cream cheese. I know it sounds familiar, right. Because I use fat-free cream cheese all of the time.
So, we have those waiting in the wings for just a moment. So, what I am going to do now is I am going to take the eggs. I am going to mix in a one tablespoon of vanilla extract. It was my wedding shower a few days ago and I didn't go through all my goodies yet, so I still, everyone knows how I have lost my tablespoon measuring. So, I am just going to use two of the half-tablespoons right here. Okay next thing you are going to use, what is this Nicole?
Nicloe DiDonato: Splenda.
Jennifer DiDonato: Splenda. That's our best friend. We are going to use a half a cup of splenda. Now for those of you out there who aren't into our fitness sweeteners or don't like splenda, like Nicole kind of prefers Equal.
Nicloe DiDonato: I usually use Equal.
Jennifer DiDonato: So, it's all in what you prefer. I'd mix it for about two minutes. Okay. Nicole why don't you plop in the cream cheese now into that. Just plop it all in there. Alright. So, now what we are going to do is take a sugar-free packet of lemon jello and just kind of throw it in. We toss it in. Now, the next one we are going to do, which gives it even more of a cheesecake flavor is sugar-free cheese cake pudding. I didn't even know they made it.
Nicloe DiDonato: I knew neither.
Jennifer DiDonato: I didn't even know they made it. I know it. It's really awesome. And for those of you out there, who want to watch your calorie intake and who have a sweet tooth. I mean, I totally stand by the whole sugar-free, fat-free jellos. They are just awesome. So we have got it in there. We are just going to mix it all up until it's really creamy, just like a regular cream cheese mixture. So, I am just going to mix it now. Right here. Just with a spatula, just kind of fold it to get any parts that were you not fully mixed in there. So, we have that all set.
Now what we are going to do, we are just going to move this on over is grab muffin tins. This makes a serving of 18. Okay. So what I did, here is my new nonstick. Thank you. I will send out my thank you cards. I am officially an adult. So, we have 18 right here. What I am going to do is take some non-stick spray and I am just going to spray lightly in the bottom of each paper, cupcake paper and just take about two tablespoons worth right here and just plop it on in.
Nicloe DiDonato: Now when you are coming up with this recipes, how many times do you have to make them in order for them to actually work or work not? Like when you are thinking these you thought?
Jennifer DiDonato: Well, a lot to times, like you got the protein pancake once which were like tried and true favorite. So, those I have modified through the years and other ones it's like I have all these ingredients that I typically use in all of my recipes and I wonder well, what can I make with them. And so I do experiment maybe about once or twice, I will need to try it again.
Alright. So, now we have all the mixtures in. Have them all in their little tins right here. Right now, I am going to put them in the oven. We are going to set the timer for 30 minutes. But I am going to want you to check on them periodically just to make sure that it's browning okay. Alright. Now while those are cooking, I have Nicole bring out the raspberries right here. These are frozen raspberries. You can get them anywhere.
Nicloe DiDonato: I cook those a lot.
Jennifer DiDonato: Nicole. You want to come on.
Nicloe DiDonato: I put those in my oatmeal, in the mornings for my oats. And they are cheaper sometimes than fresh fruit.
Jennifer DiDonato: Exactly, like we are big apetits of buying the frozen fruits and things like that. Because then it won't go bad and you will eat it. So, I am going to have you put a cup into a saucepan. Just like that, frozen, like I said.
And Nicole is going to put some sugar-free raspberry jello mix in here as well. Okay. So, while that's in there. Now you are just going to put it on the stove for -- and put it on like low, because what I want this to do is going to melt down. And it is going to make a gel raspberry topping for our little cheese cake bites. So we are going to wait for that to melt down. And we will be checking on the cheesecake bites and then I will be ready to eat.
Okay, so we are all set. The timer went off, I added about 5 minutes, because I peeked at them, they weren't brown as fast as I wanted them to. So, I put them in for total of 35 minutes. So, opening it up right now. Bring them out.
Nicole DiDonato: Here we are. Here is what one of these looks like. It's a little soufflé type of thing. A little soufflé.
Jennifer DiDonato: Put all these little mini cheesecakes, you are going to cool them for about a half an hour and then you are going to stick them in the refrigerator for another hour or two because you want to make sure they are nice and cool. And then when they are done, just take them out and you can put the raspberry topping right on top.
So it's going to taste delicious. And you are going to have a healthy nutritious meal. I am sorry not meal, but actually treat with the raspberry on top. And now guys, these only contain 45 calories/serving. Can you believe it?
A half a gram of fat, if that, about eight carbohydrates and only two grams of sugar and five and a half grams of protein. Because with the protein in it, that comes from the sugar-free, the fat-free cream cheese. So, it's just packed full of goodness and protein and I think that people will enjoy them.
