Fettuccini Pizza Casserole Recipe Hi I am Betty; welcome to Betty’s Kitchen, tonight we are making Pizza Casserole. And this is an excellent recipe that I obtain from my daughter’s mother-in-law. She is a wonderful cook and she gave me this great recipe that I’m going to share with you. This begins with cooking off some pasta and the pasta is fettuccini noodles. I have a 12 ounce box here but I only need half of it. So what I am going to do is bring some water to a bowl, right here I have about half of this full, it’s right up to here and it’s just beginning to bubble, so it’s ready when you put our pasta in. Now I’ll need half of this, I’m just trying to bring out and spread into halves, don’t you think perfect but I think that is good enough. So those will stay, there goes my colander unfortunately I’m not rich. These are bit broken in the middle and then that allows you to put them in without bending them and trying to work with the full length of the fettuccini noodle. And those are just going to simmer away for about eight minutes, so I’ll come back and continue the recipe when these are ready to be combined with some other ingredients. My fettuccini noodles are done. They’ve been cooking about eight minutes. They are to the point where they a little bit yellow that means are going to be a little chewy. That they are going to be baked in the oven and that will bake them all the way done. So now my colander which I had sitting over here, I am going to use pour this through. In order to get rid of that water, I apprehended this steam monger, so now I just drain our fettuccini noodles all of them. Shake them out a bit so they won’t have extra water in your casserole, put this back in the original pot where it was cooked and then bring it over to your work space. Now I have some things that I am going to add in and let me grab a spoon in here to mix it up. One thing is pizza sauce, it doesn’t matter what brand, this is just kind of a standard, a sized 14 ounces is all going in there. So we’ll just open it up and insert pizza sauce, just through with that. The next thing I’ll have is mozzarella cheese and I have the bag here that came out off, still all of it in there. I have used it before also, so this is one and one half cups. I am going to put half of that into my Casserole mix. So that would be a three quarters of a cup and just kind of guessing at it. If I don’t hit it right on the dot, it doesn’t really matter but I want to say roughly 3/4 of a cup to go on the top. So there we are with our mozzarella, parmesan grated cheese. You could use shredded cheese, it doesn’t really matter. By the way this was shredded mozzarella which I was suggest that you use. So one quarter cup goes in there and then we are down to our pepperoni. This is Hormel brand and it is eight ounces but you don’t need all of that. You need about three and a half or four ounce then cut them in half. And then mix all of this together. We have a dish here that is oven proof. It is a Pyrex dish that is 13 by nine by two. So I am going to pour my casserole into that dish. But I’m trying to make sure all of these pepperoni’s get separated so they’re not in one big lump. And they had a tendency to stick together in that little bowl. So I am trying to do a quite a bit of stirring here. Just start one in end and then let it come down to what it looks like before we have our final ingredient so three quarters of a cup of shredded mozzarella cheese goes on top. I got lot added in the corner there let spread that out, then that looks pretty good. It’s ready to go into a 400 degree oven. So I have my oven pre-heated and I’ll be cooking this really a short time 10 to 15 minutes and I want to show you something that I’m going to work on while this is baking. Now just need to put this kind of in the center so I need my racks arranged where it can go at the center of the oven up and down and then center of the oven left to right. While that is cooking, let’s go over here and talk about the bread we’ll going to have with it. Have you explored in your supermarket and the deli section you can find lots of interesting international breads? And this is called Ciabatta and it is an Italian roll and if you like Italian bread, you can just choose a loaf but in this case, I think it is a little more interesting to try something like a roll. And I—this did not come divided, it comes like this. You can put them in the oven just like this and when you serve them, the individual person eating can cut it and put butter on it or dip it in olive oil or something like that. What I have decided to do is to mix up some—well I don’t necessary mix it but I’m going to spread butter on each of this halves. And then right here I have some cooked garlic and that just comes from my bottled garlic that you can buy at your supermarket. So to make garlic bread from these rolls, you just need a little butter and a little garlic and then place them in a skillet. And turn it on and toss them, so I’ll be working on that while our Pizza Casserole is cooking. And I’ll be back to serve everything in just a minute. My Pizza Casserole has been cooking for 15 minutes at 400 degrees and I want you to see how nice and bubbly it is. That’s how when you know it’s ready to come out. It has to get hot all the way through. That cheese needs to melt and those pepperonis need to give up any blow that they might have and all of it comes together, so it is a wonderful looking dish. Now you have to turn off the oven, let me go around here and check on our bread. That is good, you do have to tend to this and I have been watching it. I don’t want let that garlic burn, because it is very easy for garlic to burn. So let’s serve this hot. We have our bread there and here is the plate I got for serving our Pizza Casserole. Let’s take some from one end and this is going to be all slippery, so it looks a little messy. I should’ve gotten my pasta utensil out but there we go, there is a nice serving of our pizza. So we have our Italian bread Ciabatta and our pizza casserole and I’ve made a nice salad. I didn’t make it; actually I just opened the bag. This was a spring greens and mixed with spinach and I put a nice tiny dressing, I think it is Catalina that I like on top of it. And I have my ice tea and I think I am ready to go.
