Paul Rinehart: Fish sausages. Ingredients needed are 12 oz cod, one cup bread crumbs, three eggs, parsley, one shallot, half cup flour, one tablespoon Hungarian sweet paprika, one tablespoon Hungarian hot paprika, oil to fry and lemon for garnish.
Chop parsley and shallot and set aside. Combine fish, bread crumbs, and eggs in a food processor. Use pulse setting. Mix together the fish mush, parsley, shallots, paprika and salt or pepper. Use a spatula.
Form sausages and roll in flour. In heated oil, drop sausages into frying pan. Ensure oil comes at least half way up. Cook until golden brown. Serve with a lemon wedge and enjoy.
