4th of July Strawberry-Blueberry Parfait Recipe

Hi I’m Betty. Welcome to Betty’s Kitchen. Today we’re doing a strawberry-blueberry
parfait. It’s going to be a colorful dessert that I think you’ll really enjoy. It’s going to be
tasty and 1 great thing about it is going to be red, white and blue. If you want to use it for
4th of July which is coming up real soon then it’s the easiest thing in the world that you
can have for dessert and it’s prettiest too.
You go to your grocery store and get some freshly picked strawberries. You can pick
them freshly of the shelf and then blueberries, freshly picked off the shelf and you have
your 2 fruits. To these fruits I have added some Splenda. I have added 1 tablespoon to 2
cups of strawberries and these strawberries have been quartered. They were big and so I
cut them in half and then a half again and then I put about 1 tablespoon of Splenda just in
case there might be a little tart.
Also for the blueberries, I put 1 tablespoon you can probably see a little white there of
Splenda and I stir these around and actually I made two of these already which I’ll show
you when I end up with this. So we have our two fruits that are ready to go so it’s red and
blue. Our white is going to be whipped topping. I’m using fat free whipped topping
because I like to make fruit salad mainly fruit and not had a lot of additives that add
calories I so you can use the regular but this is going to be fat free.
I’ve got some additional red but this is going to be as a pretty looking part of the parfait, a
binder and also it has a little strawberry paste to it. It is sugar free and that’s another
reason that I did add some Splenda because this is not super sweet. It’s just sugar free and
you can use the grater if you would rather. What you need is something like this. This is a
Sundae glass or dish. If you don’t have that then if you just have well a crystal ball or a
clear bowl then that helps a lot with colorful desserts particularly when you’re
emphasizing red white and blue.
Let’s start assembling our 4th of July Strawberry-Blueberry parfait. On the bottom I’m
going to put some whipped topping just a little as a cushion to start with, not that much.
Then I’m going to go to the red so just a little bit of strawberry. It’s kind of small down at
the bottom so I’m getting the smaller ones to go down to the bottom but I want enough of
them that they will show on all sides but because the whole idea here is to have a layered
look so you see that.
Over that I’m going to put my nice glaze that’s a very pretty tie in right there. Next pick
up some blueberries. We want them to show at the size so enough but not too much. You
don’t want to have a sort of a fruit that goes for an inch and then the next fruit just goes
for half an inch. Try to make it fairly even. But I’ve used the four ingredients that I’m
going to be using so I’m just going to repeat on the bottom goes— and this will be a little
more because this glass is widening out but here goes the whipped topping and then on
top of that a few more strawberries this time because we need a few more with a whiter
top.
The glaze on top of that, get it over to the edge, you know it’s pretty to see that glaze on
the outside too and then our blueberries. Plenty of those, you need to get to the edge and
now we will be ready for the last time through so I want plenty of whipped topping, this
is kind of topping it off and if you’ll watch what I do here I’m going to make a slight
variation from what I’ve been doing up to this point. I want to swirl a little bit to make it
pretty because it will probably show somewhat and then I want to choose some nice
looking strawberries for the top and place them kind of nicely if I can.
We got to leave enough room for the blueberries. I’m not going to put the glaze this time.
I think if I did that if we kind of kill the effect of having a dessert that is topped with a
topping so let’s put in our blueberries oops and it depends on how much you have put on
top as to how you’ll be able to fit there in your final parfait but that’s how it looks isn’t
that pretty. Let me bring over my other ones and show you what a grouping of them will
look like when you’re serving them at your 4th of July get together so here’s one and then
here are a couple more.
And when you serve these you might actually want to give your best along the spoon and
this is called an ice tea spoon so when they’re eating it there will be easily be able to get
to the bottom of it without getting their fingers sticky with the whip topping. This is a
nice dessert and so easy so quick and so pretty that you can put together for a nice
celebration for your 4th of July.
