Sawatdee! My name is Anjali. Welcome to Thai Foodcast; today I’m, going to teach you how to make Fresh Spring Rolls. Fresh Spring Rolls are originally from Vietnam but I love them so much that I thought I will tell you how to make my own recipe. Fresh Spring Rolls are fun to make because the whole family can help wrap them like a small assembly line. The key to Fresh Spring Roll is the fresh vegetables and some good peanut sauce. So, today we can make them both.
These are the ingredients that you’re going to need to make Fresh Spring Rolls, one packet spring roll wrappers. This is dry spring roll wrapper. You need to go at the Asian store to get it and you can find it on the shelf, not in the freezer. Half cup of Hoisin Sauce, this is called Hoisin Sauce is the classic Chinese sauce, grilled Peking duck and mojo. You need to go to an Asian food store to get it. One cup of ground peanut, one cup of water, a quarter pound sliced turkey. Traditionally, the meat is trim but I like turkey and if you're a vegetarian you can use tofu too. One bunch of cilantro, one cucumber, one bunch of basil, one carrot, one bunch of mint, and 1 ½ cup of cabbage.
The first thing we need to do is make the peanut sauce. We can start by grinding the peanut. I’m going to use the food processor. The sauce is very simple. First add the Hoisin Sauce and then add the ground peanut and then add the water. Mix everything together. Now, turn the stove to medium heat until it boils. Then cover the pot until it starts to boil. Once the sauce starts to boil, reduce the heat to low and stir it for two minutes and that’s it, the sauce is done.
Now that the sauce is done, it’s time to make Spring Rolls. But first, we’re going to need to peel the cucumber. Now, cut off the ends and slice the cucumber. Slice the cucumber into a long thin strip and then take the seed part out. Next, thread the carrot. You want long, thin strip of carrot. Now it’s time to make spring rolls. Take the wrapper out and soak in the warm water and turn it around so all the parts of the wrapper are soaked in the water for about 10 seconds. Take it out and shake a little bit. Put it down. Take one piece of turkey and put it down toward myself. Add cilantro and two or three leaves of mint, and two leaves of basil. It smells so good and two pinches of cabbage. Add one strip of cucumber, two or three strip of carrots or as much as you like.
Now it’s time to roll it. Now take the back of the wrapper, fold it in and roll it at the end. Fold the left side in, the right side in and fold it toward the end. Now you’ve got a spring roll and then repeat. Finally, slice the spring roll in half. Fresh spring rolls make great appetizers but be careful it’s hard to stop to eating them.
