Fry Smelts
Six oz of beer ¾-cup mayonnaise
Two eggs Capers
Two cups flour one shallot
Two tablespoons oil Two tablespoons lemon juice
Salt & pepper One-tablespoon oil
Old Bay seasoning One-tablespoon oil
Smelts (fish) Salt & pepper
Smelts Tart sauce
Making it
Smelts Tartar Sauce
1. In a bowl, add 1-cup flour, 1.Mix mayo, oil and lemon
Eggs, oil and beer, mix juice until incorporated.
2. Season with salt, pepper, 2. Add capers and shallots
& Old Bay. 3. Season with salt & pepper.
3. Dredge smelts in flour.
Dip in batter.
4. Fry until crispy brown.
