Today, I’m going to show you how to cook this frozen bean curd into a delicious soup. The frozen bean curd is actually made from the fresh bean curd. What you do is you drain the water inside the fresh bean curd and just freeze them and defrost it the night before you need them and cut into little squares like this. It looks really funny when you’ve frozen them. It looks like layers here. Anyway, this is about 800 grams. You can use it from 500 grams to 800 grams. It depends on the size you can buy from the market.
We also need about 100 to 120 grams of the shrimps and you can use either the cooked one of the fresh one. If you use the fresh one, just don’t forget to stir fry them about one or two minutes in the wok and when it’s turned to a pink color, remove from the wok and then set aside.
Also, we need three spring onions chopped and one inch of root ginger chopped, 25 grams of fresh coriander chopped. And also, we need about 1 tbsp of Chinese rice wine but if you don’t have it, you can use dry sherry and a few drops of sesame oil, some salt, about half teaspoon of Szechuan pepper powder or you can use the fresh ground Szechuan pepper. And also, we need about 1 ½ liter of chicken stock or fish stock, 2 tbsp of vegetable oil or you can use groundnut oil. I like it groundnut oil which is a peanut oil. Also, you can use some chicken powder but if you don’t like it, just leave it out. Let me show you how to make the soup.
First of all, we heat the wok up and add the oil. When it’s medium hot, we add the ginger and the spring onions. Give a quick stir-fry. Then we add the chicken stock. I’m going to bring the stock to boil. When the stock is boiled, then we add the frozen bean curd and bring that bean curd back to boil again.
When the bean curd is boiled, then we add the rest of the ingredients—the shrimps, 1 tbsp of Chinese rice wine or dry sherry, ½ tsp of the Szechuan pepper, just some salt to taste. If you think you need more soup, you can add more water and add a little bit more salt to taste, but here I think I just got it right. And then turn the heat down to a simmer about ten minutes.
Ten minutes later, it looks like our delicious frozen bean curd soup is done. Last stage, we add a few drops of sesame oil, just a few drops, and then we add the fresh coriander. Wow, look at the color, really fresh and nice.
