Baked Chicken with Potato and Sqaush
Patti Moreno: Hey everybody! I am Patti Moreno, the Garden Girl and today we are in my kitchen and I am going to make a classic traditional baked chicken meal. I am so excited.
Over here I have my rock cornish hens that I raised myself and I've got a bunch of other fresh ingredients from my garden. Great thing about making your own stuffing is that you can add whatever you like.
So for example, if you don't like celery, don't add celery. If you like onions or don't like onions, don't add onions. I have the freshest ingredient. So I am going to include a bunch of that in my stuffing.
Now I am sure there are a lot of people out there who have tasted broccoli or a bunch of different vegetables that they don't like. Take that person and give them that same vegetable that's been freshly grown, home-grown out of the garden. I bet that they change their mind.
These are my sautéd onion and celery and a whole bunch of butter. Don't be shy on the butter in this meal. Now I am taking my salad seasoning. This is as traditional as you can get and I am just lightly coating the top of the chicken with it and now I am going to go back and start rubbing and rubbing again. So go ahead, I've got my oven preheated right now at 350, and when I cook these, I am going to cook these at a couple of different temperatures.
I am going to cook them at 350 to begin with, let it slow cook. This is slow food. Perfectly stuffed not over-stuffed. Fresh ingredients, they taste delicious and now that I am done with this, I am going to line inside of the pan with my potatoes.
I am just quartering these. The oven is at 350 degrees and I am going to leave it in there until it's almost ready and then I am going to end it. I want to brown the outside of the chicken, I am going to raise the temperature up. It's about 400-425.
The chicken looks amazing and it's cooking very, very well, it smells really good. Wow! Look at that.
Now I am going to take my base baster here, get all the juices. Stuffing is perfectly brown. I am actually going to go in there and have a taste. Hmm... you guys hungry up there yet. Hmm... it's perfect.
