Thanks for stopping by, you are watching www.fixmyrecipe.com. Chef Billy Parisi here, our new fix goes to Erin of Colorado Springs, Colorado and Steve of Chicago, Illinois. Both of them wrote to me asking me if I have any really cool gluten-free recipes. I have exactly that, a recipe both of you are absolutely going to love. Alright you two, the first thing we need to do is cream together this butter and sugar.
In the meantime we are going to go ahead and blend our eggs and bananas and simply add it right into that cream butter and sugar mixture. While the sugar and butter is still creaming, don't forget to add a zest and lemon juice from one lemon. Our sugar, butter and banana mixture is still creaming which is totally fine, because in the meantime, we are going to go ahead and sift together this buckwheat flour, brown rice flour, baking soda and salt. This is where our food becomes gluten-free.
Alright, once everything is perfectly finished, let's go ahead and add our dry to our wet, just combine it. Next, be sure to grease and flour up that cake pan. We are going to pour our mixture right in there. Next we are going in the oven 350 degrees for about 60-70 minutes. Oh man! Erin and Steve, does this look amazing? And the smells are absolutely wonderful. Erin, Steve, that is so tasty and you know what, I don't care if you are allergic to gluten or not. I think you should try out this recipe. You get all those bananas and all that lemon flavor. Try out this gluten-free banana lemon cake.
