Brad: In this delicious and high-tech episode of quality time, I get Betty of averagebetty.com, to help to prepare a wonderful mother’s day feast from a 1000 miles away.

Brad: Betty?
Betty: Hey, Brad how’s it going?
Brad: Its good. How are you?
Betty: Fantastic. What’s up?
Brad: Well, you know, Mother’s day is coming up, and I want to cook a wonderful brunch, special brunch, for my wife, Liz. And, I went to averagebetty.com, and I downloaded the coffee cake recipe, and the Green Chili Casserole Recipe, but I’m freaked out Betty, I’m freaked out. I’ve got all of my ingredients spread out here. I’ve got some butter melting on the stove.
Betty: Okay. Well, do you have your nine by thirteen pan?
Brad: I do. Right here, that’s nine by thirteen.
Betty: You got the butter melting, let’s go ahead and crack some eggs. So, we are making the Casserole, I take it.
Brad: Yeah, the Green Chili Casserole. Hey, it’s not quiche; it’s Casserole. Betty, I wish you could see this. No shells. I’m going to sterilize my hands. I’m washing hands.
Betty: You always want to wash your hands after you crack eggs or touch meat, touch yourself.
Brad: Touch meat. Absolutely! Those are wise words to live by. Now I have the eggs cracked there in the bowl here. What do I do?
Betty: Beat them.
Brad: Oh, must I beat the eggs?
Betty: You just make sure they are good and fluffy.
Brad: Alright, they are fluffy.
Betty: See you want to pick your cottage cheese in first.
Brad: Just because there is cottage cheese in here, it doesn’t make it sissy right?
Betty: There is a whole stick of butter in this yolk.
Brad: Ya, that’s right. Is it manly?
Betty: If that’s not manly, I don’t know what is.
Brad: That’s right. If you are baking, then it would be; I’d never eat anything else.
Betty: Give that a little stir around in there, and then start adding your other cheeses.
Brad: Look at this. This is kind of cool.
Betty: You could probably speck at the wall that too, if you would have any left over. Then you want to put your spinach and next. Have you kind of thawed and like squeezed out your spinach?
Brad: Yes, I have. It’s very nice and dry. Let me just make sure that that is indeed is spinach, because my brother-in-law, you know, goes to bed for bed-shows and also…
Betty: That could really kick a Mother’s day up a notch though, if you ask me. Not for Liz though because she is pregnant.
Brad: That’s right. You want to stay away from the whacky brunch.
Betty: Now you want to add in the chilies.
Brad: Okay.
Betty: You’ve mixed your dry ingredients together, the flour and the baking powder and the salt. You can just pour all that in and incorporate it into the eggs.
Brad: Oh! It’s this looks great, am I just eat it like this?
Betty: That’s not a good idea. You can get really sick from eating raw eggs.
Brad: Oh, can you?
Betty: Yeah, totally.
Brad: Don’t eat raw eggs.
Betty: I mean, I don’t know how Rocky Balboa did it.
Brad: Okay. I’ve got the butter.
Betty: Now just pour that butter into your Casserole dish.
Brad: Alright.
Betty: Next, you just want to take your egg mixture, and pour that into the butter mixture or into the melted butter, there is nothing mixed into the butter.
Brad: Do I cover this or uncovered?
Betty: Yeah, just some tin foil.
Brad: Tin foil, looks like it.
Betty: Something non-flammable.
Brad: Okay, now put it in the oven that I preheated, and I let it cook. Okay Betty, I’ve got the Casserole in, it’s going to cook. That’s the main part of the brunch. What else? I see a little coffee cake?
Betty: Oh yeah, the coffee cake. With the casserole, you have got the little
Coffee cake sweetness and the savory, green chili casserole, it’s got a pair of a little kick to it, not too spicy at all. The kids are not even going to think it’s spicy, they are not going to know they are spinach or cottage cheese in there.
Brad: Good way to kind of sneak that in. Add a little fresh fruit, maybe a little cantaloupe, and then some orange juice, because it’s brunch.
Betty: And, if you want to spike that up with a little mimosa action, that’s definitely the way they go.
