Hi everyone and welcome to Cajun Cooking TV. Tonight we're cooking a fresh red fish a with a lemon butter sauce, but we use lime. So let's get started. Okay, first I've got a little red fish, look at these pretty fish. As I say on the fishing shows pretty fish. So we got that ready, we're going to spray both sides with Canola oil, and we left the skin on and at the market we ask them to leave it on, because we're going to grill these. So we want it not to stick to the grill.
We've got the grill already heating. It's hot with charcoal and some mesquite chips. I am going to spray on both sides. Then I'm going to season it with Mike's special trinity of seasoning, which is Tony Chachere's. And I'm going to put some Worcestershire sauce here this time. And I asked him why I'm supposed to sprinkle this, and he told me to douse it. So that's what I'll do. That looks good. Now, I have got some beautiful rose colored salt here. Of course, these salts are fun. And his magic ingredient is garlic powder. I have to do it heavy. Just like that.
Alright, we're about our way to put this on the grill, and then we're going to make our butter sauce. First let me squeeze this lime over it.
Now out to the grill with Mike.
We got the fish on the grill, we got the grill ready, and look on video, if you want to know how to make a good charcoal fire. Meanwhile we're going to put these red fish fillets on the fire with the skin down. We're not going to turn them, we're just going to put the lid on them, and no smoke. I want to pour the extra juice on them. Covering it with the lid for, I don't know how long. We're just going to wait and see. We'll tell you at the end.
We're ready to make our lime cilantro sauce, so I'm melting in one stick of butter. And you think, oh my God that's a lot of butter. But we're not making food for the calorie conscious here folks, so we'll melt this butter, and then we're going to start mixing in some other ingredients. I got my butter bubbling hot, so I have got a fresh lime cut in half, I'm just going to squeeze that into the sauce, and we've got some more lime set aside here for later, and then I'm going to throw in a dab of Worcestershire Sauce, maybe a cup of this, and then whisk this up a bit. That looks good.
You can already smell the lime. I'm going to toss in the green onions, and then I have two cloves of garlic chopped up. Then I'm going to toss in about a teaspoon of cilantro, mix this all together, and that's my friends, a simple cilantro-lime butter sauce.
Brought in this beautiful red fish. It's tender, flaky. We grilled it for about 20 minutes, we never flipped it, we kept it on the skin side. So now I'm going to pour over this lime and cilantro butter sauce, just like this. I'm going to get some of that goody on top, that's my favorite part, just like that. Then we'll decorate it with a little slice of lime. And for a little extra garnish, I think we'll toss on a little Tony Chachere's, or a little red color, all across the plate. There we go. Doesn't that look good?
