Cynthia Sass: Extra Virgin Olive Oil is definitely one of my favorite MUFA’s in Greece olive
oil isn’t just an ingredient. Is pretty much a part of everyday life, Greeks
consumes about 20 liters of olive per person per year and they maybe on the
something. Greeks have much longer life span and lower rates of heart disease.
Olive oil has strong antibacterial properties and has even been known to kill the
bacteria and that cause peptic ulcers. It also contains antioxidants that help heart
disease and cancer and reduce inflammation of the body. It’s one of the most
versatile oils for cooking but in my book I like to pair it with age balsamic vinegar
that’s my favorite way to enjoy it. I drizzle in mixture over ripe slice tomatoes
with fresh basil or onto plate with mince garlic and fresh herbs as a dip for whole
