Here’s how to make healthy chicken ham roll ups. First you pound the chicken breast. I like to use parchment paper. And when you get it nice and thin take a wedge of laughing cow light cheese and spread it over the chicken. Get it nice and even and it’s going to melt but stay in the chicken when you cook it. Cover that with some nice fresh raw spinach. Add a couple of pieces of ham and begin the rolling process. Don’t roll it too tightly and then secure with a toothpick.

Now, place in your baking pan, add little salt, pepper, add a little salt and place in the oven at 350 for 20 minutes covered with foil, then take the foil off and cook for 15 more minutes.

I’ve just taken this over the oven. I put on foil for a couple of minutes do they’d get nice and brown on top.

And here’s our finished dinner. We’re serving it with broccoli, corn and a little pat of butter.
