Meal Makeovers
If you’re bored with breakfast, you’re going to love my recipe for a homemade granola. Now unlike a lot of granolas you might find in the market which tends to be high in sugar and ho-hum when it comes to good nutrition, my makeover for Toasty-O-Granola is a great source of whole grains, the goodness of almonds, and the natural sweetness of dried fruit. Let’s go ahead and get started.
You’ll begin with three cups of quick-cooking oats. Into that, we’ll add o’shape cereal. We’ve got two cups, a cup of almonds. Now almonds are a really good source of heart-healthy, monounsaturated fats, that’s okay to include in your diet. We’ve got a quarter cup of ground flaxseed. And flaxseed is a good source of fiber but also contains heart-healthy omega-3’s. So I love adding that to cereals and muffins, you name it. And finally, a teaspoon of cinnamon. So just stir this all together.
So once this is all combined, we’ll go ahead and mix together our liquid ingredients. Very simple, pure maple syrup. I like using the real thing because it tastes so good. A quarter cup of apple juice, just use a 100% juice. A quarter cup of canola oil, this is an oil that is heart-healthy because it also contains those really good for you omega-3 fats. A little bit of brown sugar. We just have a quarter cup and a little bit of vanilla, one teaspoon. Whisk that all together and we’re almost done believe it or not.
Once it’s liquid ingredients are all whisked together, we’ll just add it our dry ingredients and then we’re ready to place everything in the oven. Once all your ingredients are stirred together, just place the cereal on a baking sheet and I sprayed it with non-stick cooking spray and bake it at 350 degrees for about 20 minutes. And you want to stir it about 10 minutes halfway through because the edges tend to get a little brown. Our Toasty-O-Granola is done and we’ll take it out of the oven and let it cool for about 10 minutes before adding 2/3 of a cup of dried currants. Now you can also use dried cranberries or dried blueberries. I happen to like currants.
