Natalie Bowen: I am okay, thank you.
Vanessa Valera: So you are going to explain today a little bit about how a chocolate is made, and the whole procedure behind it.
Natalie Bowen: When you a taste a milk chocolate you can see the difference, it's more melty, it's more soft, and it melts easy, because there is more cocoa butter, okay, that's the cocoa butter who makes the difference. In dark chocolate, we have less cocoa butter, so that's why it's more hard, more crunchy, when you make a bite.
Vanessa Valera: Like candy.
Natalie Bowen: Yeah exactly because the cocoa paste is more important, so that's the difference.
Vanessa Valera: What about white chocolate, how do you get that consistency and why is it white?
Natalie Bowen: The white chocolate is made only with cocoa butter, but at the original taste, it doesn't taste nothing, it's like butter. On some butter it doesn't taste anything, so you have to add lots of sugar, lots of vanilla to add the taste you taste for, when you white chocolate, but it come from the coco butter at the beginning, okay. and it's more sweet, it's more sweet than the milk chocolate and the dark chocolate.
Vanessa Valera: There are a lot of myths behind chocolate, is chocolate good, is chocolate bad for us, what do you think, I mean you are an expert. you could go ahead and answer that for us?
Natalie Bowen: Sure. A good quality of chocolate like a dark chocolate, like 60% of cocoa and more, it's very good for the health. You have minerals, it's good for the your spirit, it's good for your body, it gives you some energy, so there is no -- and it's not true that if you eat chocolate you are going to become big, it's like -- it's the way you eat that. It's like your cheese or wine, if you eat just a little bit everyday, it's just perfect.
Vanessa Valera: Can you explain to us may be a little bit of this three chocolates that you have right here.
Natalie Bowen: This one is called Aztec, like I told you before the Aztec was the beginning of doing the chocolate, and this time they were doing a beverage, a hot beverage, made with pepper and spicy and oat water with the cocoa bean, so it makes lots of energy. The Riopelle, is the cheese Riopelle. It's made in Quebec and it's like the soft cheese, it's like the triple cream. So I made again that, so it's mixed with the chocolate, and it's very soft and smooth and it's very good.
Vanessa Valera: Oh! That sounds like an exquisite mix though, and what about that caramel orange.
Natalie Bowen: Yeah it's made with orange juice. with the little piece of orange peel, and it's very soft, so it's not a hard caramel, it's very soft, it's very good.
