Hey, how are you doing? This is Jack again with another cooking tip. First I want to thank you guys for all the comments you’ve been giving me on all the video sites, I really appreciate it and some of those comments are brutal. But we’re not getting into that right now. Right now what we’re going to do is, we’re going to teach you how to make spaghetti sauce. I’m asked all the time, “hey jack, how do you make the perfect spaghetti sauce?” So I’m going to show you. But first we’re going to go through the ingredients, then I’ll take you over the stove and we’re going to show you how it’s done. Alright, let’s go through these ingredients right now. First thing you’re going to need is cooking wine, it could be burgundy which is like cheap stuff, you can get a bottle like this for like a couple of bucks. So, burgundy or any red wine that you think you can cook with, you’re going to go with some extra virgin olive oil, okay, you’re going to do some oregano, and you could use some basil, and then this is any form you want, I use onion powder; but you can do minced onion, you can chop off your own fresh or you can use any powder like I’m doing. And then the last ingredient that you’re going to need is the garlic, here’s some wet garlic you see in the store, it’s all liquid-y and it’s really fresh and very strong, really awesome. This is all your flavor of the sauce, okay? Now, to make the sauce, you’re going to need three things; you’re going to need a can of tomato puree, you’re going to need a can of crushed tomatoes and you’re going to need one of these little guys, a can of tomato paste. A puree, a crushed and a paste is all you need. Now this is about one single serving size, if you got company coming over, double that number, okay? Alright now, the other thing is meat, you’ve got to put meat in the sauce. Whoever doesn’t put meat in the sauce you might as well buy a can at the store and crack it open and pour it on your pasta, okay? Every meat is different; today we’re going to be using the sweet Italian sausage, okay, if you put meatballs in or you like chicken in the sauce or beef, every single meat makes a taste completely different. So let’s go to the stove right now, see how this works. Okay, so the first thing you do, I always cover the whole bottom with olive oil, I know they’re all putting a little dab here, no, no, no. We’re going to fry this up and try to pit, there we go. Put the olive oil in there; turn the heat up on high, I like putting the meat in, you put the meat in on hot oil, its awesome, the sizzling. Now that it’s nice and hot, here’s the tip, always cut your sausages in half. You don’t have to, I just do it because it cooks quicker, it allows the insides to cook better and nobody likes the inside of your sausage not fully cooked. Now what we’re going to do is, we’re going to season the meat while it’s in the oil. I will start with the greens, I don’t know why; probably I can get a better view of it. Now, I’m not going to give you exact measurements but I’m just going to show you, all you do is like you’re seasoning to season it right it on the top, that’s it, okay? Kind of like when you’re seasoning meat on the grill however you like that, just give it a sprinkle all the way across all the meat and then the same, that was the oregano, same with the basil, get a little bit of the onion powder, this stuff’s very fine you always have to take it easy; my last and favorite, every Italian loves it, I know you think I’m crazy with the big teeth whole of garlic, tada, right there. Once everything is browned in there, the oil’s still in there, some of the grease from the sausage and the seasoning is all browned, you can take some of your wine here and once again, I don’t worry about putting too much wine in, you just kind of throw it up, just for the wine covers the bottom along with the rest of the oil and seasoning. We’re going to let done all that flavor cook together for about 5 more minutes. Now that the burgundy is all nice and cooked into the meat, all the seasonings have been browned, the meat is cooked, we’re going to start adding our cans and we’re going to start with the crushed tomatoes, you’re going to add that slowly so it doesn’t splash all over the place, and then you’re going to deep sherry, and then lastly you’re going to use spoon to get this out, to get that basically and don’t splash yourself, you’re just going to basically scoop out all the paste, we’ll just dump it there and grab your big wooden spoon, you’ve got to have one of these, okay? These are great for stirring sauce and spanking kids, no oh, oh great, how many more (---) on that? Gotcha! Alright here you go, so you’re going to slowly mix in all the seasoning there in, you’ve got the olive oil, and you’ve got the wine, the sauce and it all mixes in beautifully. We’re going to let that sit for a few more minutes, okay? Alright, now it’s time to put the stuff together, this stuff’s good, oh by the way, you got to have one of these, here’s my pasta bowl. Hey, I didn’t get like this one lettuce, you know? Okay, so let’s put the pasta in first just got some fresh angel hair pasta, we’ll put that right in there, oh yeah. That’ll shake that out there we go, beautiful. Alright now, going to get some sausage, with some sauce here; now of course I’m not eating this whole thing, this is presentation. Ah, this is the best part, sweet, this right is to taste, and you get to watch me. Okay so anyway, let’s take a little sample here, and that is really hot; mmm, did I say enough? It’s delicious, spaghetti sauce, that’s’ how you make it and I hope you wrote it all down, if not, rewind the video and do it again. Keep the questions coming, we’ll see you later.
