Brighton and welcome to watchmoto.com and today, David Cote of – is going to show
us how to make a live curry sushi.
David: Welcome in the kitchen of --. We will be making today a live curry sushi. Basically, it’s
really simple. It’s a way to make a fast wrap to go so here it’s already made actually but
it’s really simple. It’s a paste. We use -- and flower seeds for making it. It could be any
nuts. It’s a base so we use almonds that have sprouted or soaked. You can use walnuts,
pine nuts, macadamia, pumpkin seeds, everything really. There’s no-you can use all
kind of nuts that has been sprouted, as long as it’s sprouted and wet, it will work really.
I put curry in it. There’s a way to make food in – is that we used five flavors all the time
so bitter, sweet, acidic, salty and hot. As long as you put these five flavors in the food
and combine them really well, you will make always a pretty good meal. So here we
have sprouted sunflower seeds.
I put a little bit of -- in it and then curry and the apple cider vinegar. So here we go. So
instead of putting rice basically which is a grain that has not much nutrients in it. It’s
basically just sugar, I use the sunflower seeds. And then I put it in a cushion of lettuce,
nice organic lettuce that grows not too far from here. In the summer, we have farms
that just provide us with all this. Most tasty food there is in the world really. And then
you put all the food you want to put, red onions, carrots. I put avocado if I have
avocadoes. No problem, zucchinis. I could put cucumbers if I want, organic apples. And
then sprouts of course without the sprouting here. It’s important to put something
stuffed at the bottom and something stuffed at the top so that we don’t destroy the leaf
basically. The sushi leaves I use in most grocery stores will be more green.
These ones are dark. They’re harder to break. This hasn’t been cooked. Normally,
they’re roasted. Don’t freak out if you don’t find any raw vegetable, that’s no problem.
That’s how we play the game, everything is uncooked and raw so we try to find all our
ingredients basically raw food. I’m not shy on the sprouts, I put in as much as I can and
then, it’s really simple, I just roll it like a cigar basically and then these leaves, you need
to wet them a little bit. So I’m going to need some water. I just use my finger and I just
wet the side. Like if I was rolling a cigarette but a healthy cigarette and then you can cut
it in half as a wrap or you can cut pieces too. Now we have a sushi. Really easy you
know.
