Hi, welcome to Cajun Cooking TV. It’s Sunday afternoon in the steak house and though big kids are coming later, so I thought a try a heavy dessert. We’re going to make up a Pecan pie with a little extra kick in it. We’re going to put in some Bourbon.
So, first in here I have all my ingredients ready to go. I’ve got a large mixing bowl with three eggs cracked in here. I’m going to lift these up, and then start adding in the other ingredients. This is really easy if you get all your ingredients together.
So, then we have three quarter cup of sugar. We have an organic sugar, so it’s a little brown color. You want to mix that in then we have one cup of a light corn syrup. You can also use the dark corn syrup, so pour that in. Then we have three tablespoons of melted butter I just put it in this cup, and melted in the oven really simple. Mix that in really good.
Then I have a shot of Kentucky Bourbon. This is two tablespoons, so I'm just going to pour that right in. And then I have some vanilla extract. I need one teaspoon. Here we go, and then I have a quarter teaspoons of salt. Here’s a little bit, so mix this really well, and then we’re going to add in our Pecans and some chocolate chips.
All right, so in here I have two thirds cup of chocolate chips, pour that in, switch to this food and I have two cups of Pecan these are really small, but if you have the large one that’s fine too. So, I'm going to mix these all together.
And then I have a pie shell, a deep dish pie shell already prepared. Pie shell much easier and I let it thaw this come frozen, so I let that thaw for about 30 minutes, so we got this mix coat so all you do is combines all those ingredients.
Pecan pie is just a Southern favorite I love to go to Piccadilly and get a pecan pie. So I thought I try it myself, so we’re just going to pour this into the pie shell. And it’s just going to fit to. Look at that, perfect. Somehow I know had about pie shells around here. Look at that we’re going to put this on a baking dish. We pre-heated the oven to 350 and we’re going to bake this for 45 minutes.
