These are a great basic cookie and are particularly popular around Christmas time. Hi! I am Rebecca Brayton, you are welcome to mojo.com and today we will be making rolled sugar cookies.
For this recipe, we will need a cup-and-a-half of soften butter, 2 cups of sugar, 4 eggs, 1 teaspoon of vanilla extract, 5 cups of all purpose flour, 2 teaspoons of baking powder, and 1 teaspoon of salt. In a large bowl, cream together the butter and sugar and until smooth.
Now beat in the eggs and vanilla. Stir in the flour, baking powder and salt. Wrap the dough in saran wrap and leave it to chill for at least an hour or over night.
Preheat the oven to 400 degrees. Roll out your dough on a floured surface till it's about a quarter to half-an-inch thick.
A tip here is to roll your dough out directly on to some parchment paper you've cut to fit your baking sheet. That way when you cut out your cookies, you don't have to worry about ruining their shape while you transfer them.
Now that your dough is rolled out, cut out the shapes for the cookie cutter. Place your cookie about an inch apart about on un-greased baking sheets as you know we are using parchment paper to you make sure that our cookies don't stick.
If you are decorating your cookies with coloured sugar, you are going to want to do that before they go in the oven. Now bake for 6 to 8 minutes in your preheated oven. Let them cool completely on wire racks. These cookies are great in plain or decorated with sugar or you could bring them to life with icing. Any way you serve them; they are delicious.
