Hello and welcome to Bowery Kitchen Supplies. I am Howard, one of the owners and I am here to help you pick out a kitchen knife. We sell to both the trade and homes. So, what I am going to tell you today works for people in New York City Restaurants, so I hope it will work out for you.
First the most important thing when buying a knife is that feels comfortable in your hand. As you can see by the huge display of knife behind me, there is whole away of knives. You have plastic handle knives which are work very nicely, non-slippage, comfortable, easy to throw into the dishwasher. Some people are comfortable with plastics in their hands.
You have wood resin hands handles as your next option. And as you can see, they come in many different sizes and shapes. Again, you have to pick out knife that was comfortable in your hand.
Once you find a knife that was comfortable in your hand, let us say you find something that is foundly comfortable in your hand, the next thing you want to look for is the steel. You want to look for good steel that you can sharpen and most knives today are made out of high-carbon steel. That is a mixture of stainless steel and carbon steel. So it is easily too sharpened and will not rust on it the most important if you leave it on a dishwasher.
Very popular now also are Japanese knives. Japanese knives tend to be lighter. Again so what feels good in your hand, if you like heavy knives then you stick with that. If you like something light, if you cooking a lot, heavy knife can get hard to use. So a nice light knife, and they extremely sharp as you can see here, let me just show you.

Extremely sharp these Japanese knives. So, you got to be very careful.
If you do not want to bother with sharpening your knife then maybe you want to try ceramic knife. Again, what is nice about ceramic knife is you will never have to sharpen it. It is guaranteed sharp for life. And it will never rust. You can throw it on a dishwasher. Please do not throw it on the floor that is all.
Okay, I like to show you some really beautiful knives but now let me show you the queen of the crop. These are handmade knives made in Brooklyn USA, extremely sharp.
