Okay, this is Howard and I am one of the owners of Bowery Kitchen Supply. Now that you bought yourself a beautiful knife, you need to keep care of this knife. You need to take care of your knives.
What you need to do is you need to sharpen it once in a while. That was right. It is not going to stay sharp forever. So, let me show you some tips here on how you can sharpen your own knife.
You can easily buy a stone at a specialty shop or a nice shop or at my shop. I will go through these stones here to see where they are in or go through some other options as well.
When you pick a stone, depending on the knife you have. If you have sushi knife, you are going to want a higher number stone. That means it is going to be smoother and it is going to get you a finer blade.
But for any home chef, for home knife, you would want to go so sharp. Basically what you are going to do is you are going to keep this stone in water for five minutes, soak in water for five minutes. Once you soak it, take it out, and take your knife and take it at a 45 degree angle and you are just going to run it down the stone.
It takes a little work to get used to. Again, make sure you have a towel or something underneath the stone so it will not move around on you, and then you will have to do the other side same way.
There are some really good items out in the market right now that will help you do this, but I think after a few tries, you will be able to do it on your own.
If you like, you could also move on to a diamond stone which is supposedly harder than anything else, so it will sharpen your knife extremely well. Again this is just a sample of the many different types of stones that you have.
Once you sharpen it on a stone, you will need to hone it and a big misconception is that this is sharpening steel, this is a honing steel, It is not going to sharpen your knife. What it is doing is that it is aligning little, little, little blades that are on your knife. So you just need to pass it a few times down.
Again with a little practice, you should do this every time you use your knife. You do not have to sharpen it as often on a stone. You sharpen every few months depends on how much you use your knife, but you should always hone the knife anytime you take it out. Just a few little blades, you could also do it this way too. If you want to go a little safer do it out and get a nice fine edge.
Then there you have some wonderful items on the market now. It is electric knife sharpener. Very easy to turn it on and you will run the knife through three or four times and you have got yourself a sharp blade.
You can also use a hand held item like this which has two stones and again, you will run the knife through.
So, a sharp knife is a safe knife. Just remember that. The sharper, the safer.
Okay so knife sharpening again is very important to keep your knife extremely sharp. A sharp knife is a safe knife, so as you see here you have many options from easily hand held to a little bit more difficulty but fun stones.
