Thanks for checking out fixmyrecipe.com, Chef Billy Parisi here and our next recipe fix goes to Patrick Bolton of Middleton Tennessee. He sent us an old recipe for key lime pie and the problem he is having is it is not congealing; it is a very wet pie filling. I think I know your problem Pat, watch closely I am going to take care of here. First thing is first let's make a homemade pie crust, this is what you need. Graham cracker crumbs, a quarter pound of unsalted soft butter and a little bit of sugar for extra sweetness. And you simply want to cut in our fat.
Alright our butter in our graham cracker crumbs are incorporated. Now we are simply going to add it to our pie tin and form our crust. Alright it may take a few minutes but this is about what you should look like you simply want to put it in the oven and part bake our crust at 350 degrees for roughly 10 to 12 minutes but first you got to add some parchment paper over the top, hit it with some beans or rice doesn't really matter. You want to do this, so the crust doesn't fall and holds it shape.
Alright now that our pie crust is in the oven part-baking we are going to do our pie filling our key lime pie. First thing you want to do is separates four egg yolks throw them into a bowl and mix them, be careful not to over mix, if you do so your key lime pie is going to fall. Our yolks are slightly fluffy exactly where we want them to be we are going to add our Borden's condensed sweetened milk. And now for flavoring of course key lime juice and for little color and a little more wine flavor we are going to add that lime rind that will be so nicely diced up.
Alright our pie crust is done let's take it out of the oven discard that parchment paper and rice, put in our filling pop it back in the oven. Now we are going to add our beautiful key lime filling right into our pan. And that looks so nice, right back in the oven. Alright now our key lime pie is settling with those egg yolks in there, not only will it cook out the salmonella, it is also going to help it settle. Let's take a peak. Oh yeah it's done, great right here we'll go, now we just want to pop it in the cooler for about an hour and cool it off, come back and check it out and maybe to get a little taste.
Alright Pat our key lime pie has been sitting in the cooler for about two hours it's nice and cold let's plate it up and tad a little taste. Alright Pat remember where you went wrong you need to add a few more egg yolks that's the only problem I saw in your recipe and you are going to be so satisfied with your final product.
