Ethan Waldman: Hello, and welcome to your first in a series of dessert training video, provided to you by Culinary Institute of Ithaca. My name is Ethan and today I am going to show you how to make one of my favorite desserts, carrot cake. The first step is to grate the carrots, if you have a food processor you can do this fairly quickly. But a standard cheese garter works just fine. Once you are done, you shall have a bowl full of grated carrots that looks something like this.
The very next step is to assemble our dry ingredients and the best way to do this is in a big glass mixing bowl, first, we will put in two cups of white flour. Next we add two cups of white sugar. Next we add two teaspoons of baking soda and two teaspoons of baking powder. We can also add two teaspoon of cinnamon. We also need to add one teaspoon of salt, dry ingredients should look something like this when you are done.
Our next step is to add the oil and vanilla and mix and then we also add one and a quarter cups of vegetable oil and you can use any kind hand held mixer. You want to start mixing slowly so you do not end up with flour all over everywhere. After a couple of seconds, it's time to add the first egg, the recipe calls for adding the eggs one at a time. So that is what I am going to do and finally the last egg. Now I am going to mix until everything is well distributed, once you have a batter of this consistency, you can add in your carrots and mix one more time. Great and when you are done the batter should like this.
Before pouring the batter into the cake pan you must grease the pan. Now the pan is well greased, and we will pour the batter in. And now it's time to bake.
