I’m Shannon Overmiller, the executive chef of The Majestic in Old Town Alexandria.
Today, I just previously showed you how we mix the ingredients together to form the home style meatloaf. And now what we’re showing you how to test the meat in a pan to see if it needs more seasoning. When you’re going to test the meat in the pan, you simply take a little piece of the meat mixture, for it into a little patty, preheat your pan to medium or so. Just take a little patty, just enough to taste, it’s got fat in it so you don’t need anymore oil. All right, just want you to cook it through, just give it a taste to see if it’s to your liking. Use a little more salt, not much. So I’m going to add probably about, maybe a fifth of what is in there now. A little more. And a little more pepper. Well it’s very close, so you don’t really have to test it again, because you know where you are. That’s it. So now your meatloaf is seasoned, and you checked it in the pan to check the seasoning and then going back and re-adjusted which is always very important when making anything. You must go and test it, taste it, and go back and adjust it again.
So now I’ll show you after showing you the mixture, and tasting and testing and adjusting. I’ll show you now how to form the meatloaf into loafs and bake.
