How to Choose Dessert Wine
Female: So you’ve got dessert?
Susan: Yes I've got dessert. Chocolate ganache cake from John Jon
Female: Excellent. The trick with pairing wine with dessert and it seems counterintuitive really think about that makes sense. You want the wine to be a little bit sweeter than whatever you're serving because the sugar will make the wine seem sour. So whatever you do that’s why you start talking of these really heavy desserts, it’s really hard to find something that doesn’t complement exactly.
Susan: Okay what do you think chocolate?
Female: Actually, it’s actually easier to pair than you think. Couple of different things would work depending on where you want to go but my first stop would be a got from Northern Italy, Camino de Romania. It’s rich but not as heavy as port, it’s not as high in alcohol than port because frankly in the end of your meal you have a lot of drinking.
Susan: So it’s going to be red?
Female: Yes, it’s a red.
Susan: Interesting.
Female: It’s -- grapes, fermented and allowed to stay sweet that they don’t ferment it dry. But with a chocolate if there’s a sort of raspberry note that comes out so the two together usually do really well. And it’s just a little bit sweeter.
Susan: Great! And which bottle is that?
Female: You can't miss it, it’s got the marvel statue of two lovers.
Susan: Okay.
Female: It’s good for a romantic dessert as well. But the like I've said Northern Italian and you just need a little pour. At the end of the night, small glassware.
Susan: Sort of fluted.
Female: Sort of fluted is fine or little port glasses.
Susan: So great, all right.
Female: And this is $14.99. And you don’t need to buy as much as either for dessert wine. I just say a third of people don’t actually drink dessert wine. At the end of the meal they want coffee and then small pours. So this one bottle would be --
Susan: We are doing for the whole dinner, it’s going to be sort of wine tasting so everybody is going to taste. We’ve actually cards for comments in that sort of little place.
Female: But you can get at least --
Susan: You think two or just one?
Female: -- sweet tooth?
Susan: I think just one would be fine. So let’s move on to cheese.
Female: Right.
