How to Clean Squid
Squid, also known as Calamari comes in many forms, fresh or frozen, whole or cut, partially or fully cleaned. Buying fresh squid can be a cost-saver but it will take a bit of time to properly clean. First, gently pull of the head and tentacles from the body and set aside. With the back of a knife, press out the insides.
Next, remove the quill which is this clear, sword-shaped piece of cartilage. Insert your finger to remove any bits that might be left inside. Then take off the outer skin by peeling it like this. Removing the fins is optional.
Cut off the tentacles just above the eyes. The tentacles have a tiny piece of cartilage which is called the beak. This can easily be cut off using scissors. These squid were frozen and partially cleaned. Just make sure to drain any excess water before you begin.
Even though they were partially cleaned, you will still have to remove the quill and beak. There are often little pieces of the quill left behind so make sure to get right down to the bottom. Also don’t forget to remove the beak.
Once done, rinse thoroughly in cold water, drain and continue with your recipe.
