How to Clean and Sort Mussels
Hi everyone. Today we’re going to be doing a mussel dish but I thought I’d do a little bit
of a primer on how to tell if the mussels you’ve purchased are good or not or which ones
you should cook. So these are PEI farmed mussels and you get it with the supermarket in
this plastic netting and you just want to go through them all and make sure that none of
the shells are broken. You don’t want to see any broken shells, any cracked shells if there
are, toss those out. And I don’t see any right off the bat. But this one here is open and
usually if you tap it should close immediately and if it doesn’t close immediately, well
this one does close. But if you find any that don’t close and they’re open and they stay
open get rid of them. Don’t cook them, they’re not any good.
So there is one, no good. So just go through them and make sure that you see and here’s
one of the broken shell, no good. And also, these are farmed and they’re usually fairly
clean but you can see there’s this little beard that hangs off at the end and you typically
you want to cut that off so that it doesn’t end up in your meal. It’s really easy to do. Just
get yourself a paring knife and just grab it with the edge of the paring knife and pull it off
and it just scrapes off; really not much to it and that’s about it. I mean it’s farmed again
like I said and they come perfectly clean usually. So I guess stay tuned and we’ll do our
recipe.
