The crab cooker here in Newport Beach, California has been the local’s favorite since 1951. They're famous for the fisherman’s bread, fresh clam chowder and king crab legs.
If you have a chance to visit the seafood restaurant, be sure to arrive early. People often line up out the door for a taste of the simply prepared seafood, serve with potatoes or rice pea loaf. The king crab legs dipped in drawn butter are amazing and what's best you can buy some at the fish market to bring home.
Alright, let's get back to our own kitchen and make some great crab legs. Today, we are preparing while the Alaskan king crab legs which almost always come frozen and precooked and the best way to fry your frozen your crab legs are in the refrigerator the day before but in a pinch you can file them under cold running water.
You know, it was so nice outside today that I didn’t feel like sitting inside and steaming this in the hot kitchen. So today, I'm going to show you how to crab legs out on the grill. Before cooking crab legs we’re going to make a quick garlic butter for basting and dipping. You're going to love this.
All that I'm going to do here is really simple. We’re going to melt down a stick of butter and then we’re going to add some fresh rosemary, one teaspoon, some fresh thyme one teaspoon and one minced clove of garlic. We’ll let it simmer for about five minutes and the pan on medium here and I'm just whisking the butter so it doesn’t stand here and burn. And I'm going to put in the garlic, so that starts to cook and then I throw in meat herbs and I will set it to low and let it simmer for about five minutes.
Though steaming crab legs and boiling crab legs are popular method, our crab leg recipe is perfect for an outdoor barbecue. Before you place your crab legs on the grill of barbecue, minced some garlic in cool water and then tap dry with the paper towel. Before placing on the grill I like to make a small cut down the soft white shell. This allows for the basting sauce to seep into the meat and then when it’s time to eat it will allow you to peel the shell much easier. To grill crab legs, you preheat your grill or barbecue to medium heat. Remember we’re just reheating this so it’s only going to be five to 10 minutes max.
I'm just going to grill some fresh cut vegetables here that I'm going to put the crab legs on. We’re going to base everything with our delicious garlic butter and let this go for a few minutes on each side and we’re going to give them a turn and make sure you want to get your base in here where the knuckle is. After I base the vegetable I like to sprinkle a little kosher salt on them and then we’re going to give them a turn and do the same thing to the other side. After five minutes I'm going to turn everything over and give them another base.
It’s okay if it flares up a little bit and it will burn off real quick. Remember there goes the little slits in there so let's make sure we've based right into those cracks. These are going to be ready in just about two minutes. The aroma of sweet grilled crab, fresh vegetables all combined with garlic and fresh herbs and butter. It’s going to be great.
