Speaker: One of the things people don't think to do on their barbecue is cook pizza and it's a shame because you can get a fantastic pizza from your barbecue once you know how. There are a couple of secrets, just follow me.
First of all, you need to make your dough. I just use a standard bread mix from a packet and follow the instructions. I make mine in my blender, you might like to make yours in your bread machine on dough cycle.
Keep the mixture out into a greased bowl and put it somewhere nice and warm so that the mixture can rise for the next couple of hours. That gives you time to prepare all your toppings. Next, we are going to need to make a sauce and sauce is really simple. Add a can of tomatoes and some garlic into the blender and just blend it together and what you end up with is a nice, light, chunky, garlicky tomato sauce for your pizza base.
Tip your bread dough out on to a floured surface, cut it into four and roll out your first pizza. Put the rolled base on to a tray. I like to use a little corn flour on mine which stops it from sticking. Now I am not going to tell you what to put on your pizza. For me, it's the usual stuff, onions, capsicum, hot sausage, olives, you know the things.
But if you are under pressure at home to put pineapple on, make sure you squeeze it out first and cut it finely. In fact, when everything is cut finely. Moisture is the killer for a pizza. It will make your crust soggy and your pizza will be horrible.
But if you are one of those people who thinks sate chicken would be good on pizza, please get some psychiatric help. Pay attention, this is the important part. You'll need three empty tomato cans and if take my advice, you'll device a simple method of ensuring that mother-in-laws and other idiots don't throw them out.
Now, to the barbecue. I have removed the outside grill plates to maximize the air flow. I am going to have the outside burners on flat out and the center ones on low, I want the hottest barbecue I can possibly get for this. We make a little tripod out of the cans and put the pizza tray right on the top and this is why, so that when we shut them in, the pizza tray stays right up here in the hottest part of the barbecue and the heat can go around it and make the pizza lovely and crisp and that is the secret of making fabulous pizza on your home barbecue.
Get your barbecue running nice and hot, this one is running at about 350 degrees and now we are ready to put the pizza in. Wow, look at that. We are ready to roll.
