How to Cook and Serve Lumpia

Hi, my name is Cliff Wharton. I'm a chef at TenPenh Restaurant. Next, I want to show you how we fry our spring rolls. I showed you how to make them. But now, what we would like to do is just take this. I don't have a pot with grease or oil in it but what you want to do is just submerge these in oil for maybe six to eight minutes or till GBD, culinary term pretty much meaning, golden brown and delicious. This is pretty much what you want to see right here.

This is the Lumpia, we serve four to an order at the restaurant. We do it with a different sauce, but let me do a traditional sauce for you, it's very simple. This is what we do, this is what we do at home. Just pretty much take a clove of garlic. We are going to smash it. So, all the flavors and juices come out. And we use the white distilled vinegar, add that to your garlic, take some crushed black pepper, add that. I just want to mix that a little bit. If you are daring enough, you can add some chilies to it to give us some spice, but this is pretty much how we serve our spring rolls. It’s the way we serve Lumpia at home, that should be it.
