Cut them in strip form. The common strip cut is 1/8 inch wide and one 1.5 in length. Let’s demonstrate this with chicken portion and it will be used in chicken spring rose.
Cut the chicken breast 1.5inch wide lengthwise. Take one of the chicken strips and proceed to cut them in strip into 1/8 inch thick slices. Once these are cut 1/8 slices, place these slices flat on the cutting board. Remember, these slices have thickness and you need to cut them again to attain in strip form.
Now, cut these flattened slices to 1/8 inch wide strip. Generally, each slice cut into half lengthwise will give you the desire 1/8 inch strip. Repeat .this process, cunning process for the rest of the chicken slices. The common triangular size is ¾ inch, having all sizes equal or known an equilateral triangle. These chicken pieces are used in recipes such as chicken with cheese sauce as an example.
To accomplish this, cut the chicken breast into ¾ inch strip lengthwise. Then, you will angle the cleaver with the chicken strip at 45 degrees and make a cut. Now, move the bottom edge of the cleaver at a distant of ¾ inch, merger at the bottom of the strip. Slant the top edge of the cleaver to the top apart of the chicken strip to form a triangular shape and make a cut. This will give a triangular shape having all sides are equal. Now, to cut the next triangle portion, position your cleaver at 45 degrees and merger this at the top of the strip and make a nano cut. And do this in an alternate and continue to cut until the whole strip is done.
Now, you have cut ¾ inch triangular pieces. A larger triangular pieces such as one inch and one and ¼ can be obtained by cutting the strip into one inch or one and ¼ inch strip and follow the same cutting procedure.
