Hi, Tom Papoutsis and we’re back making chestnut filling for your Holiday bird. Okay, it’s been 35-45 minutes, and we’re going to pull this out, take a look at it and see what it looks like. Now remember, we typically would be doing this inside the bird, but nothing says that we can’t do it like this; where we actually have it in a pan or in a baking dish and we just bake it. Just like any other filling, I’m going to keep this hot edge here, remember hot stuff, use your safety tank, very carefully we’re going to pull this off and voila, this is what we have.
You can see we’ve got the raisins are in there, they’re plumped up a little bit; when you put this in the bird, the raisins will plump up a little more and probably it’s going to take only a little bit more of that turkey flavor because it’s actually inside the bird and all the juices are flowing, excuse me, flowing through there, but you can see the pieces of chestnut, everything is in there, this is actually looking very, very nice. So what I’m going to do, I’m going to try a little bit of this if you don’t mind, okay here we go, just put a little bit in there. That is, the smell is just awesome. So let’s just try a little bit, there’s a little turkey, I’ve got a little piece of turkey right there, some raisins, some chestnut, I just want to get a little bit of everything, and let’s try it, see what we got. It’s hot, so be careful.
Perfect, it’s just right; in the bird it’s going to take a lone a little bit different flavor. This, to be honest with you, what I would do is, if you didn’t want to use this, to stuff your bird, you could make this and you could serve it with chicken, you could serve it with a turkey breast, you could serve it with almost anything. Awesome, awesome flavor; so give it a try, it’s very simple, very easy to make. There’s a little bit of prep time involved probably on a scale from beginner to expert, I’d put this in the intermediate, right in the middle cause it takes a little bit of prep time. But the rewards, it’s a fantastic dish, give it a try, try it in your turkey or try it as a side dish, baking it like this, it’s wonderful.
