How to Garnish

Now we are going to make a courgette basket. The same French book can be used to make cucumber baskets as well, but this one makes a very nice little garnish for starter. So we take a courgette and we will cut about 7 cm, and then stand it on its end and with your upper core, centering it carefully. You go straight through the middle, and take out the center. Then roll it around, make sure its got a flat surface where it stands. We are going to do two parallel cuts just halfway through the courgette about a centimeter apart, and then you cut in from the side carefully to meet these cuts. Turn it around, and then from the side again, to make the cuts and then you got a courgette basket which you can fill with asparagus, green beans and carrots. And this can then be steamed for about five minutes.
