How to Julienne Snowpeas for Lumpia

Hi. My name is Cliff Wharton, I’m the chef at TenPenh Restaurant and we’re making Lumpia today. I am going to show you how to julienne some snow peas.

Always wash your vegetables. Give these a little rinse. With snow peas what we’d like to do is we take one of the snow pea and you want to pullout a little thin thread and it gets a little chewy. So you don’t have that part of your snow pea. So we’ll do that with all of these. It is like a piece of thread that hangs on right on the ends. That should be plenty.

Snow peas, you want to be careful. You just kind of line them up a little bit and julienne it. I will just do one at a time. With juliennes, you just want to go slow, nice long cuts, always keep y our fingers covered. So, you get some even cuts there. Of course, I have done this many times, you can stack it and you can just do more than one at a time. These are all going to be mixed together. If you want to keep them uniformed, I would just do one at a time.

That’s how we julienne snow peas. Next, I will show how to do dice some onion.
