I’ve had some requests for some easy vegetable side dishes and this is one. So there are your carrots, I’ve got 7 of them, and there is my Chinese 5 Spice Mix, except when I turn it around, it had 7 spices. I can’t explain it. I’ve got two bonus spices.
Alright, preheat your oven at 375 degrees. Now, to prep your carrots, we’re going to do what’s called a bias cut or cut it on a diagonal. I had one small carrot, so that one I just cut in half on that bias. The other one is a larger carrot, so I had to cut in half lengthwise and then I did my bias cut. Now later when these roast, you’re going to see those little kind of pointy bits get a little bit of extra—kind of chewy and—not crispy but a little different texture.
The ingredient is so simple. About a tablespoon or two of vegetable oil, about a half teaspoon of the 5 Spice—I mean 7 Spice, a little bit of salt, maybe half a teaspoon. That’s to taste. I always say that, you know that. Give it a toss with—your hand is the best tool for this. And when they’re all evenly coated, what you want to do is play carrots puzzle. You want to get them kind of all lined up and fitting in all the right grooves so they’re kind of evenly spaced so they cook evenly. Throw them in the oven about half hour to 40 minutes.
One optional step, if you want to, you can pull them out halfway through and give them a toss with your tongs and kind of check how done they are, but that’s optional. In about half hour or 40 minutes, you are going to have these amazingly aromatic, delicious 5 Spice—I mean 7 roast carrots.
This is such a great side dish. I serve this with that brisket you saw me cook a few days ago, really good, really exotic but familiar, not too exotic.
