Today, I’m going to teach how to make Avocado Whip. This is a fluffier version of the classic guacamole. Guaranteed to be a hit at any block party.
Hi I’m Caitlin with cooking with Caitlin and today we are the market picking out avocados from the Avocado Whip. And the avocados are exactly completely in season, I’ll recommend buying them a few days before you want to do the recipe and then storing them in a brown paper bag until they get ripe. You’ll they’re ripe when you push on it and it has a little gap. Let’s get cooking.
So, I’m going to teach a great alternative to the classic guacamole. I like to call it Avocado Whip. You just need a few ingredients for today’s recipe. One lime, two avocadoes, a little salt, some ground coriander, some cumin, and whipping cream. Your first step you want to prepare the avocados. First you’re going to take your knife and just break the skin of the avocados. Move your avocado more than your knife. That way you won’t cut yourself. When you completely got around, twist it and you will see the inside. Going to get the knife, twist with your knife and then to pop this out the pit, go from the back of your knife and then just pop it in your hand, now you really won’t cut yourself.
I like to save the pits and put it back in the avocado whip, that way we’ll help fro turning brown and just spoon this into your bowl. The juice of one lime. I like to average about one half of the lime per avocado. About two teaspoons of kosher salt, a teaspoon of ground coriander, a teaspoon of cumin, both of these will add a lot of smoke to the recipe. Now with this, you’re just going to mash it with fork.
For your second step, you want your whipping cream. Using heavy whipping cream, I’ll put about two cups into a large bowl. If you want to make sure that the cream is really cold and that way it will whip really quickly. If it’s warm the protein tends to separate and you get kind of a buttery texture. We’re going to just going to whip this to it's peak.
Now when the cream has reached it's peak and can hold it's own, you want to fold in your avocado mash. There you go. You want to make sure that you’re pretty delicate as not to flip the whip cream. Now just to plate, you want to make a big bowl, so you can share it with everybody and garlic chips. Just a few chips.
