Speaker: Today I am making Banana Muffins. You take three whole bananas and a cup of sugar, one egg, two cups of all purpose flour, half teaspoon of salt, half cup of vegetable oil and one teaspoon of baking soda. Okay, I have got the egg, oil and sugar and you just mix that together first.
Now I put my bananas in this little baby chopper, blender thing so I mix that up, two bananas, one in, I will do the next one, I just put it in there I like it kind of chopped up and liquidy. Just mix it in with the sugar, egg, oil mixture, like that. Then add your flour and baking soda and salt, Two cups of flour, just put it in there, just kind of like mix it up a little bit before you hit it with the mixture.
Just mix it up until it's nice and smooth. Spray your muffin pan, this is the jumbo muffin pan and then I just take a ice cream scooper like this and I just scoop it in there, you might need one and a half ice cream scoops for that, I like big muffins fill it about, 3/4 is full. Okay pop it in the oven, pop, pop it in the oven for 20 minutes. There is too white down in the center but they are brown around the edges, so cover it with foil and then put it back in the oven for seven more minutes or until it's done. They came out really nice. See if it's not real raw nut it's done.
Banana muffins, ready to cool and eat. Just take it out and put on a cooling rack and let it cool then I wrap each one in foil just to keep it nice and fresh. I wish you could smell, it's really good.
