DADDY BRAD: Have your kids ever asked if they could have cupcakes for dinner? Stick around for this episode of Quality time and you will find out how to say yes.
Thanks to our sponsor, Baby Bjorn, the best design baby gear on the market, Baby Bjorn. Now, kids love cupcakes. But mom and dad would rather than eat little more meat and potatoes. You can have them do both, meat and potato cup cakes.
I like to call it the American special. Kids love to make them, kids love to eat them and its incredibly simple. You are going to need one pound ground hamburger, a half cup of seasoned bread crumbs, 1 cup of grated Monterey jack cheese, 3 tablespoons of ketchup, 1 egg, a half teaspoon of celery salt, and a quarter teaspoon pepper. Combine all these ingredients in a big bowl and have your kids stir them up.
Next, get 12 of these foil or paper baking cups and fill them up with about three quarters full with the meat mixture and then put them in the muffin pan. Preheat your oven at 375 and put those bad boys in and let them cook for about 15, 20 minutes, until they are thoroughly done.
Now for the frosting. You can go to the store and buy a box of instant potatoes and then follow the directions on the box. Or, you can make your frosting from the scratch mash potatoes. It's pretty easy. What you need is, 3 or 4 medium white potatoes, have your kids peel them. Nice them up into small cubes put them in a pot. Cover them with water and then let them boil for about 15 to 20 minutes until they are tender. And take that pot and drain the stalk off. Then yeah, they go to down. About a half cup, half and half and about a half a stick of butter and then you get to mashing them. You know, you can mash them with one of those hand held mashers, but this is frosting man. No lobes can be in this.
So you may want to get either a blender or one of those fancy electronic blender. Get it really good and creamy and now you have your frosting. But here is the cool part. Divide the potatoes into 3 to 4 bowls and get some food coloring. And make one bowl green, one bowl blue.
Now, you got some frosting. Now, its time to decorate your carnivorous cup cakes. Get a heave duty Ziplock bag and one of these little nifty icing tips. Cut off the end of the bag, the corner of the bag and put your icing tip in there. Then fill this big bad boy up with some of your colored frosting and then let your kids go to town on the cup cakes like green ones and pink ones and purple ones. Once they are frosted, the final step, add sprinkles. Personally, I like to add baked sprinkles. Everything is better when baked.
