How to Make Black Bean and Corn Salad

Andrea Beaman: I am going to make for you a light and refreshing summer Black Bean and Corn Salad with a citrus vinaigrette. So I got some black beans from the store. I cooked these fresh but you can buy canned. I am just going to take the black beans. Black beans are rich in folate and fiber and calcium and iron, you name it. We are using some corn because corn is the epitome of summer. It's fun it's light and sweet. Some red pepper, rich in vitamin C and lycopene. You can see all these colors really coming up here. Some red onions. Just go in there.

I am also going to put in some cilantro and cilantro is just so summery. It's rich and chlorophyll, vitamin C but I am going to show you how to mince, so you don't want to spend hours mincing, you take your herb whatever you want to mince and you just fold it up in to a little ball and then it minces so easily. You don't have to spend hours and hours and hours going back over it. You know chopping and chopping and chopping away. Just fold it up into a little ball and you are done. It's pretty simple.

So I am going to put some cilantro in and I am also making our salad dressing. I am going to use a little bit of olive oil and let's take it up here so you can see it better. A little bit of granulated cane juice which is a natural sweetener, some lime juice, some cumin, a little bit of sea salt and some black pepper and I am going to mix this all up and let it marinate for about 25 minutes and look at how bright and beautiful this is.

So you can either let this marinate inside the refrigerator or outside the refrigerator. If you marinate it inside the refrigerator it will take a longer time, but if you marinate outside the refrigerator it only takes about 25 minutes. So we are going to pretend as it is 25 minutes later and here you have a delicious summer salad which is a great side dish, a good, fun, light, refreshing food. That is so flavorful. You are going to love this dish. This is a dish that you are going to say, I love this.
