Hey everybody, I’m Bobby Flay; as a native New Yorker, I always visit the Arthur Avenue in The Bronx, the Southern and Italian flavor. So that’s where I went for my inspiration from my Arthur Avenue Burger.
And actually on Arthur Avenue I did a throw down which is the Eggplant Parmigiano throw down, and I love that one. (Oh, Bobby Flay is here, here we go).So what’s in Arthur Avenue Stuff Burger? Well, when I think about it, I think about all the Southern and Italian ingredients that make all that food so delicious; like in tomatoes, so that’s going to be the ketchup, and I think garlic and crushed with peppers, spicy and garlicky. So I’m going to take a little bit of garlic, I’m going to crush the garlic with some kosher salt and the salt actually works it and braise it to create a paste.
Now here’s how to make our ketchup; I start with a little bit of ketchup and I take my fresh garlic, so crush with pepper, some red wine vinegar, there’s some fresh herbs; fresh oregano, some fresh basil. A little salt and pepper, we’re just going to heat this up on the grill, you know for just a couple of minutes.
So I’m going to take my burgers off the grill and I’m going to serve it on a Ciabatta bun, Italian style, of course and I’m going to take a Fra Diavolo ketchup, but to bring the flavor it’s all about the condiments. We’re just going to put our Fra Diavolo ketchup right on top of the burger and then I’m going to take my Freego, which is some Asiago and Parmesan cheese and it actually make a way for out of it. The best way to do it is a non-stick pan; so you got a very thin, crisp cheese wafer; and then I’m going to top it with some arugula. Being a native New Yorker, I think Arthur Avenue 101 classic Southern Italian food and this is what I call The Arthur Avenue Burger; spicy, garlicky and crunchy. With that Arthur Avenue, the Bronx.
