You know at least once a year I find myself in Miami, Florida. You see for the South Beach Wine and Food Festival. Now, whenever I’m in Miami, I always find myself hating my favorite Cuban sandwich stand. Today, I’m going to make my version of that sandwich but out of burger, it’s called the Miami Burger. It’s a pressed burger with ham, cheese, pickles, mustard, mayonnaise and roasted garlic. Let’s get to it.
Alright, today we’re making burgers, Miami style which is really influenced by Cuban sandwiches. Here is what we’re going to do; we’re going to take the burger off the grill, 80% meat to 20% fat is what I like to use; usually about 6-7 ounces of chopped meat and we’re going to put them onto the bottom of our bun, and then we’re going to build it like a Cuban sandwich, okay? So we’re going to take some Swiss cheese, some smoked ham, some Wurstless cheese, okay make a good packing. And we’re going to take some pickle, whenever you get a Cuban Sandwich, think about it this way; it’s a Swiss cheese, some kind of smoked ham, sometimes there’s some roasted pork on there as well; always some pickles and then mustard and mayonnaise. What I’m going to do is I’m going to make a mustard and mayonnaise with roasted garlic. So we’re going to take a good quality mayonnaise, some roasted garlic cloves and then we’ll take a little Dijon mustard; salt and pepper, we’re just going to blend this all up with a fork, just make sure that you crust the roasted garlic really well. Okay, then we’re going to take some of our mustard mayonnaise with the roasted garlic, put it on top, cover the bun, just brush a little oil on top of the bun and we’re going to take some foil, put it in the bottom of the cast iron, put the burgers on top, fold it over, put it on the grill. Okay then we’ll take another cast iron pan or you can take something like a brick or something really heavy and just put it right on top of the burgers. So we’re using the weight of the skillet to actually press down the sandwich and hopefully what’s going to happen is we’re going to get that burger just a little crispy.
Okay, hear it sizzling that means the cheese has probably dripped out with some of the juices from the burger. So that’s you want to see, you want to see the bun pressed out like that cause it’s a little crusty. Miami Stuff burger, inspired by the Cuban sandwich, all I need is a Mojito.
