Everybody on Bobby Flay. Southwestern flavors are my goal two ingredients; I like to use them from breakfast to dinner, and even on a burger. Think about it, queso sauce, roast stick rib chilies and some blue corn tortillas; that’s the inspiration for my Sta. Fe burger, come check it out.
Today we’re making Sta. Fe burgers; green chilies, queso sauce blue corned tortillas, this is a Poblano pepper, it looks like a green bell pepper, (0:00:30.5) at the end but it has a great pepper background flavor and a little bit of heat. So what I do is I roasted the green chilies for my Sta. Fe burger.
Let me show you how to make the queso sauce. We’re going to start with some butter and some flour, and we’re going to make what is known as rue. Okay, equal parts butter and flour, you make a whisk and stir it up.
Southwestern ingredients are really special to me, I’ve been cooking with Southwestern ingredients basically in my whole career; and I love going to a place called Santa Fe in New Mexico because they have fantastic food, the people are tremendous and also they make great Margaritas.
So now as the flour and the butter have melted together, we’re going to add a little bit of milk, and this is actually going to make our cream sauce, they call this vegemilk, it’s one of the mother sauces. Okay, now I’m going to add some of the white cheddar to thicken up our sauce, okay, and as that’s melting, I’m going chop off my green chili, roasted, peeled and seeded. I like the texture of the chopped up green chilies as long as they’re roasted, peeled and seeded so that they’re nice and soft. Cheese is melting, if it gets too thick, add a little milk, if you want to make it a little thicker add a little more cheese. Salt and pepper, that’s simple; Queso sauce is done. We’re going to take our burgers off and we’re going to make Santa Fe burger. We’re going to take a little bit of our Queso sauce, spread it right on top of the burger and our roasted green chilies, and I’m going to get some blue corned tortilla chips because we try to crunchify everything. There it is, that’s our Santa Fe Burger. This one’s a little messy but that means its good. This is delicious; the cheese, the roasted green chilies, the blue corned tortillas, we’ll be right back to Santa Fe in Mexico. Margarita, anybody?
