Jenny Slafkosky: The great way to make quick appetizers for a party is to make little bread baskets and fill them with either smoke salmon and cream cheese or peanut butter and jelly for the kids or basically anything you have on hand.
I will show you how to make the bread basket, it's really easy. All you need is plain sandwich bread and a rolling pin and a muffin tin. You just take your rolling pin and you squish your sandwich bread out until it's about an eight on an inch thick and if you crush away the crust, don't worry about it because you are going to cut these into rounds anyway. So you are not going to need the crust.
So just roll the bread using your rolling pin until it's significantly flatter than it was before. About an eight of an inch thick it's great. This bread is a little bit tougher and hardier, so I am probably only going to get it about a quarter of an inch thick. Once you have rolled out the bread until it's flattened then use either a cookie cutter or a knife or, I am actually just using the rim of a small plastic container to cut the bread into rounds.
Got a nice round right there. You are just going to brush your round with a little bit of olive oil. Brush it on both sides. It tends to get a little greasy but it's okay. Press it into a muffin tin. When you bake this up at about 350 degrees for around 10 minutes they are going to get really crispy and they are going to hold that little cup shape from the muffin tin. Then you can fill them up with whatever you would like.
You have a quick little possible appetizer for your Super Bowl party, Cocktail party whatever you like. Alright my bread baskets are extra round, that is you can see they are nice and crispy, they are in this great little shape that you can fill with cream cheese and tamarind or just mix a little mayo with some dill and put in there on top of little slices of smoked salmon, a great elegant adult appetizer or pour some peanut butter or jelly in there and give it to the kids. They are going to love it. It's like their own personal little cup.
