Hello, this is Chef John from Foodwishes.com and today a new invention Bumblebee Soup with bacon, corn and black beans. And bumblebee because, it’s yellow and black, you got to come up with cute names if you're an online video as to be Chef. Here we go, we’re going to four pieces of bacon, four slice of bacon, just slice it up. We’re going to render the fat out until it’s nice and crispy. Alright, well, we’re going to save some of that fat, see the fat. So we’re going to take one tablespoon of that big and fat, put it back into the soup pot and add one chopped onion. You can dice it, you can mince it, it doesn’t matter.
All right, we’re going to add a pinch of salt just and sweat that on medium heat until the onion soften a little bit. We’re going to add two cloves of minced garlic or crushed garlic, sauté that for another minute and then add a quart of chicken stock. Now if you're doing the veggie version, I know you veggies are going to my nice meaty bacon recipe and make it all vegetable, that’s okay. You use vegetable stock. You can even use water if you have too.
Alright, I'm going to add two cans of black beans as serve in 15 ounce cans. I drain them, alright, give them a little quick rinse. I don’t want any of that black bean serve there. I'm going to add a little dash of chipotle pepper. That’s to taste. I put in about a half teaspoon I think. I'm going to add half bag of frozen corn, that’s eight ounces, vary it was one pound bag. Alright, you're going to put in half the bacon and we’re going to save the other half for garnish. I'm also going to put in about a half teaspoon of Mexican oregano.
There’s Greek and there’s Mexican and that the difference is well you know one is Greek and one is Mexican but they say Mexican oregano does have a little difference of flavor. So anyway, next time you have to go to the store, if you got both, do a taste test. So what we’re going to do is we’re going to bring that to a simmer and we’re going to take a potato masher and I'm going to mash about half of the black beans. Now, the more you mash the thinker it gets. If you don’t want to mash it all, you still have a great soup and they’ll just be thin.
If you mash like a lot, you'll have a really thick soup but mashed about half and then wait. Wait until the simmers it well because as it simmers the starches in the black bean that you mashed out and also some of the starch in the corn it will really thicken this up. So give it about 10 or 15 minutes simmering before you adjust your mashing amount. And that is pretty much it can you believe how easy that is. Now, of course with any soup season with salt and pepper at the end, alright, so give it some salt, stir and let it sit for a minute taste it, taste it, taste it, taste it and then you're done.
Alright, we’re going to spoon that into our bowls. I'm going to top with the other crumbled bacon that I reserved and that was a fantastic, fantastic soup or chowder which ever you prefer. So anyway, that’s bumblebee soup. If you can't get kids eat a healthy soup, just say “Hey, were having bumblebee soup” and you’ll see they’ll just come running to the table. “I want to eat bumblebee, yeah bumblebees.” So anyway give it a try and just go to this site all the ingredients are there and as always enjoy.
