Butter sauce also known as the black in fence and find a restaurants is a wonderful edition to most seafood recipes. Today lemon butter sauce use as the addition of capers to give it a nice tang. I've also added just a hint of coconut milk. It’s a faintly tropical bourbon sauce that goes really well with most fish.
For this bourbon recipe, you’re going to start off with the wider diction. Now let me show what you’re need. Before we start the wine reduction I set out three sticks of butter room temperature and I cut it up in little cubes because were going to add these one at a time to make the sauce.
For the wine reduction I used a quarter cup of wine with the juice of one lemon and don’t worry about the seeds in there because were strained this sauce, two tablespoons of chopped chives, two tablespoon of chopped parsley and a quarter cup of diced onion. I have my sauce pot pre-heated on medium. Were going to pour on the wine and the other ingredients and were going to reduce by half.
It will take a few minutes to reduce so I'm going to ride and combine a quarter of heavy cream with a quarter of coconut milk. All right! It reduces about half so at this point were going to stir in the coconut milk and the cream. And then were going to let this simmer for a couple minutes. All right I have this simmering here about two minutes and I'm going to turn it on as low as I can go and were going to drop in one cube of butter at a time and whisk it in there until it’s melted.
You see as soon that heats the cream starts to melt right away. And let’s keep whisking these in until all the butter is gone. Now that the butter is melted into the sauce I pour it through a fining strainer. And we don’t keep this we just built this out. To finish this white wine butter sauce, I'm going to add four tablespoons of capers. Half teaspoon of salt and you know a quarter teaspoon of lemon juice.
