Alright, today I want to show you a great passed hors d'oeuvre or appetizer I created for a wine and food pairing. You can read about that on the site. It’s called Calabrese Lollipop and basically, we’re going to take some long, thin bread sticks, some sliced very thin salami. Now, this is a salami variety called Sopressata and this is actually a Calabrese Sopressata which means it’s a little spicier. I have some arugula leaves and some cream cheese, and the assembly of this is super easy.
Just take a slice of your salami or your Sopressata and again, it’s got to be thin so it rolls easily. Just give it a little swipe of cheese. Again, I’m using a plain cream cheese, any spreadable cheese will work. In fact, the original version of this actually uses a cheese called Teleme. And then you’re going to take your bread stick and a couple pieces of the arugula and just roll it up.
Now, I like the look of it where the green stick out the top. So again, that’s why I call it lollipop. You hold it in your hand. It’s a great passed hors d'oeuvre because your guests’ fingers stay perfectly clean. You can switch out the meats. You can switch out the cheeses. You can use different greens, really, really nice, kind of fun to look at. You could wave them around as you’re talking and making your point, especially if you’re telling—if you talk with your hand, your Curb Your Enthusiasm fans much safer to practice your golf swing with these than those bamboo skewers. And if you don’t get that joke, sorry, if you don’t watch Curb Your Enthusiasm.
Anyway, give those a try, fantastic with any red wine. And again, what you want when you pass hors d'oeuvres is people’s fingers to stay clean and this will do it and they can eat it down to that bread stick. And enjoy!
