Decadent and delicious caramel sauce is the crowning glory of anything from ice-cream to cookies. With a few easy steps, you will have the perfect holiday gift for anyone on your list. I love caramel sauce, it's actually one of my favorite things to make. I used to be scared to death of it, but now it's actually pretty fun.
So, I start off with a cup-and-a-half of sugar, a tablespoon of corn syrup, the juice of half a lemon, and a little water. I have my burner on high and we are getting out ready to riff. I am going to take a little water and just brush down the sides to prevent recrystallization of my sugar. So here we go. Let's burn it.
So, I am starting to see beautiful caramelization going on in my pan and I am just going to give it a little swirl to make that color go around evenly. Now, I am going to go for one more second and then it's really important to work quickly here because burnt sugar will wait for no one. I turn my heat off and we go cream. We are going to see bubbling going on here. Wow! Once we see this start to settle down, we are going to start to go butter. I am going to add two sticks of butter, we are going to whisk in one or two pats at a time. This is where are beautiful saucy sauce is really getting going. Baby!
Last two pats of my butter, we are whisking that in. This looks saucy, it looks caramely. Let's give it a little QC, a little quality control. I could just east this for dessert like this. But, caramel goes great on ice-cream, pretzels, anything you want to put caramel on but I am just going to stick with the spoon. You know what I like to also do is package this up and then I give it for Christmas presents. Aren't I a smarty? So, people can do the same with their ice-cream, with their Pretzels. I am a superstar.
