Alright, Robert this caramelized apple stuffed chicken breast with apple cider sauce. Here’s what we need. I got to change up that music just like we do. I got to here that French music, were making French food. Hit it. Perfect. Lets go ahead to start.
Core and peel our apples, slice them up really thin and in a hot skillet with butter, we’re going to caramelized it, get them nice and brown while our apples are caramelizing Robert, what were going to do now is pound our chicken breast. Get them ready to stuff. Alright Robert, go ahead and put our beautiful caramelized apples on a bowl. We’re going to mix together the rest of our stuffing. Some dried cranberries with a toasted chopped pecans and my personal favorite goat cheese.
Alright, everything has come together so perfectly. Now remember those chicken breast we founded out? Season them very well with salt and pepper. Now, we’re simply going to add that apple stuffing, roll them up, get them ready to saute. Robert, these are rolled together just perfectly. Now we need to season the outside with a little salt and pepper in a hot scallop with a little bit of virgin olive oil. We are going to see them shot and make sure they’re golden brown in all the sides and we’re going to transfer them to a sheet pan, finish them in the oven, 350 degrees for about five to 10 minutes. This is actually perfect timing Robert because while our chicken is in the oven, we’re going to go ahead and make that sauce. So in that same hot scallop, let’s go ahead and start it of and the glaze with this apple cider. Be sure to scrape of all that goodness on the bottom of the pan.
Next, let’s go ahead and add in our apple cider vinegar, chicken stock, fresh thyme leaves and a squeeze of the apple lemon. We want this sauce to reduce in half before we adjust the seasonings and finish whole butter and then you know we got to play it up and try a little bit of this brand new chicken dish.
