It’s so hard to find to get Passover dessert but this year I’m going to be showing you how to make Passover matzo brittle which will be a hit at your cedar. First we’re going to take a foil lined pan just to save ourselves a little bit of a mess later on. Then we’re going to take our matzos and spread them over the entire pan, feel free to break them to make everything fit evenly to have a one nice solid layer across the whole pan.
Next we’re going to take our cookie sheet and our matzos and set them aside we won’t need this for just a little while. We’re going to preheat our oven to 375º, we will use a none stick small sauce pan, turn on our burner to about medium, medium low, we don’t want it too hot. Then we’ll take a cup of butter or 2 sticks, we’re going to add also one cup of brown sugar which will have to break up a little bit.
Then we will just let everything melt down and boil together and make sure to stir it as much as you can so that it doesn’t stick to the pot. Now that our butter and sugar mixture is boiling we’re going to cook it for about another 3 minutes making sure to stir it constantly. This is the part where it gets sticky and it all comes together so we want to make sure to keep stirring.
Our butter and sugar has been boiling for 3 minutes and these has all come together. We’re going to take it off the heat, let’s go ahead and move, bring our matzos back over. And then take that butter and sugar mixture and just pour it all over the cookie sheet. That smells great! We’ll spread it out all over the entire cookie sheet, make sure that it’s evenly across all over your matzo. Put our matzo into our 375º oven that’s been pre-heating, we’ll put that in there and we will cook it for about 8 minutes.
Now our brittles’ been in the oven for 8 minutes, see everything’s nice and bubbly, we are going to take it out. While the brittle is still hot, we’re going to get our chocolate chips and pour them over at the top of the brittle. This is just a little over a cup of mixture of bitter, sweet chocolate chips and milk chocolate chips. Then we’re going to let the chocolate chips set on top of the brittle and let everything melt., give it about 4 or 5 minutes.
We will just go ahead and spread those over the entire matzo brittle evenly across the whole pan. Let’s take our brittle and put it in the refrigerator for about an hour. Let’s try a little bite. Delicious and definitely going to be the hit of every Passover party this year.
