Craving a rich velvety chocolate dessert, treat yourself right this holiday season with my chocolate pudding towers.
Forget that artificially flavored stuff in the box, it’s so easy to make chocolate pudding from scratch and you can use the best ingredients. Mine starts with natural cocoa powder which has an incredibly high antioxidant content and almost no fat at all. Just add a little bit of cornstarch to that for thickener and a third and a cup of a cup of sugar. Not much at all, I’m just going to wisp that together, just a little pinch of salt and then we will gradually wisp in two cups of low fat milk, full extra body but not much fat at all. Wisping that in gradually and the crank of the heat here to medium and let this come to a boil whisking all the while. Once it boils, I’m just going to cook it for about a minute. You have to wisp consistently and I love this part, it’s like aromatherapy to stand over a pot of chocolate.
This is thick and beautifully shot the heat of there add some gelatin, which I have dissolved in water and that’s going to ensure that it’s going to stand up in my towers. Just wisp that in and now I’m going to use this pudding to melt some chocolate. So I have two ounces dark chocolates, 60 to 70 percent cocoa solids. The more cocoa solid it has, the more antioxidants the chocolate has. But also the more bitter it is, so I find 60 to 70 percent the perfect balance between good taste and great health. I’m just going to let this pudding melt the chocolate and then rich the flavor that’s nicely cold, thicken a little bit more.
These towers are great and I build them right now. All you do is put chocolate wafer cookie into around again, I have already sprayed this with cooking spray and put some pudding on top, topped with another cookie, some more pudding and that’s it. I’ll just do the rest and cover with plastic wrap. Okay, these just needs to go in the fridge to chill for at least three hours and it’ll be set and I have some that already chilled just waiting to be unfolded and top with little whip cream. So I show you how it’s done. Just run a knife around the outside here, you get slightly under you hear it release from the mold and there it is gorgeous chocolate pudding tower top that with dark real whip cream while with plain pudding when you can have chocolate pudding towers.
